Cauliflower pizza crust is one of those recipes I’ve been wanting to try, but for some reason have been very intimidated by. It is just so easy to roll out store bought pizza dough, put on your toppings, and bake, BUT with bikini season coming up I decided to step out of my comfort zone. If I wanted to continue to eat pizza as much as I do (which is A LOT), I needed to find a healthier version. This cauliflower crust does take a little more effort to make, but is well worth it! It really was such an indulgent and satisfying version of pizza. I ALMOST 😉 didn’t notice a difference. You can top the pizza with whatever toppings you like. I made mine with jarred tomato sauce, salami, mushrooms, cherry tomatoes, goat cheese, basil leaves, and homemade pesto. Man oh man this is so delicious! Hope you guys enjoy it as much as I did!
1 head of cauliflower (about 2 to 2 1/2 pounds)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
3 tablespoons grated parmesan
1/3 cup goat cheese
salt and pepper
Olive oil (or spray)
Toppings of your liking (pepperoni, salami, vegetables, cheeses, tomato sauce, pesto… I could go on and on)
Preheat oven to 400 degrees.
Cut the cauliflower into florets and put in a food processor. Pulse the processor until the cauliflower is completely “riced”. (This should looks like bread crumbs.)
Now to cook the cauliflower; there are multiple ways to do this. You can steam the cauliflower in a steamer until cooked, or you can cook it in boiling water for 3 to 5 minutes. Strain with a fine mesh strainer onto a dish cloth. Squeeze out all the liquid (there is going to be a lot). Once all the liquid is removed, put the cooked cauliflower in a bowl. Allow to cool slightly for 10 to 15 minutes. Once cooled, add in the egg, spices, and cheeses. Mix all the ingredients together with your hands until you have a homogenous mixture. Place on a GREASED baking tray. Make sure you put olive oil or PAM on the tray before cooking because this will stick.
Bake the crust for 30 to 45 minutes until mostly done. It will be golden around the edges. Take the crust out and lay on your toppings. I started mine with a jarred marinara sauce, then topped it with mushrooms, cherry tomatoes, salami, and goat cheese. Put the pizza back in the oven, and cook until the cheese is melted and the vegetables are cooked. This should take about 12 to 18 minutes.
When the pizza is done, I like to top mine with homemade pesto and fresh basil leaves! This adds a nice pop of freshness to the pizza. Slice and serve! Enjoy!
